❌ Weeping or going watery
❌ Sliding off the shell
❌ Making the shells go soggy overnight
❌ Cracking the shell from the inside
❌ Tasting fine on day 1, dead by day 3
…the problem isn't the shell. It's filling stability.
Most filling recipes are designed for cold European kitchens. They fail in heat, in humidity, in warm cars, on dessert tables. Macaron fillings have to do MORE than taste good — they have to hold up.

Hi, I'm Ivalina,
I've baked macarons across four kitchens in three countries — Malaysia's humidity, Tanzania's heat, Mombasa's 26°C kitchen, Nairobi at 1,750m altitude.
In every move, my shell recipe transferred. My fillings? They also needed adjustments. The ones that turned most stable in heat, travel, and 24-hour assembly are the ones in this collection.
Every filling, fully climate-tested.

❌ Not a cookbook of 30 random recipes
❌ Not buttercream-based fillings (those break in heat)
❌ Not trendy one-off flavors — every recipe is tested for stability first
It's fillings you can rely on, every batch, every climate.

"They taste really good!! Love your ganache!" — first batch, White Chocolate Ganache
"I'm making another batch today — my family loves it 🤎" — the next day
Yes — they pair with any well-baked shell, and they're especially stable with Italian-method shells.
Properly stored, 5–7 days refrigerated. Assembled macarons sit at room temp for 4–6 hours.
A digital scale, a saucepan, and a thermometer — you'll use the thermometer for the caramel and to check the ganache temperature before adding the butter.
Just one worth a mention: glucose syrup. It's there to keep the ganache smooth, glossy, and stable — it stops the sugar from crystallizing and helps the filling stay soft and pipeable instead of grainy. If you can't find it, swap in the same amount of light corn syrup (1:1), or leave it out — the ganache will still work, just a touch less silky.
